Baked Oatmeal

Warm up your morning breakfast with oatmeal and fruit straight from the oven.

Ingredients

  • 4 cups uncooked regular oatmeal
  • 6 T. brown sugar
  • 6 T. white sugar
  • 2 tsp. baking powder
  • 1/2 tsp. salt
  • 1/2 tsp. cinnamon
  • 2 large eggs
  • 1 cup milk
  • 1/2 cup vegetable oil
  • 1 cup blueberries, frozen or fresh
  • 1 cup chopped peaches or pears, fresh or canned

Preparation
Preheat oven to 350 degrees F.

In large bowl, combine dry ingredients, and mix well. In separate bowl, whisk eggs. Add milk and oil, and stir to combine. Add to dry mixture, and stir with large spoon until all dry ingredients have been incorporated. Fold in fruit.

Pour into lightly greased 9- by 13-inch pan. Bake 30 to 40 minutes until golden brown on top. Serve warm, with milk.

This can be refrigerated and eaten later cold or reheated.
