Ingredients
- 1/4 cup cornstarch
- 2 cups milk, divided
- 2 large egg yolks
- 1 large egg
- 1/3 cup granulated sugar
- 2 T. unsalted butter
- 6 ounces chocolate, chopped (or 1 cup chocolate chips)
- 1 tsp. vanilla extract
- 1 tsp. peppermint extract
Preparation
In medium bowl, whisk cornstarch in 1/2 cup milk until dissolved; whisk in yolks and egg. In medium saucepan, whisk 1½ cups milk and sugar until steaming. Slowly whisk milk-and-sugar mixture into egg mixture; pour back into saucepan. Cook over medium heat until thickened, whisking steadily until it comes just to a boil. Press through strainer. Whisk in butter and chocolate until melted. Add vanilla and mint extracts. Chill, covered with a piece of plastic wrap or buttered waxed paper pressed directly onto the cream.
