Pasta with Kale, Goat Cheese and Walnuts

In this meatless meal, slightly bitter kale shares the spotlight with tangy, soft goat cheese.

If you really want to take this recipe over the top, serve it with homemade pasta!

Yield:  4 servings

Ingredients

  • 3/4 cup walnuts, chopped
  • 2 T. extra virgin olive oil
  • 1 medium onion, thinly sliced
  • 4 cloves garlic, minced
  • 1½ to 2 pounds kale, stems removed, chopped
  • 1 tsp. apple cider vinegar
  • 1/4 tsp. smoked sweet paprika
  • 1/2 tsp. sea salt
  • 1/4 tsp. ground black pepper
  • 1 pound pasta, cooked
  • 8 ounces goat cheese

Preparation
Preheat skillet over medium-high heat, and add walnuts. Gently toast for 3 to 5 minutes, stirring often. Remove from heat, and set aside to cool.

Heat olive oil in skillet over medium-high heat. Add onion and garlic. Stir to coat in oil, and cook about 2 minutes. Add kale.

Turn kale frequently to coat with oil and cook for about 5 minutes, or until it begins to wilt. Stir in the apple cider vinegar, paprika, salt and pepper. Remove from the heat.

On serving platter, arrange pasta and top with kale. Break apart goat cheese and distribute it around kale. Sprinkle with toasted walnuts. Serve warm.
