Recipe: Mint Summer Punch with Lemon

This makes a great summer drink, but it’s good enough for any season.

Servings: 2

Ingredients

  • 1/2 lemon, seeded and very thinly sliced
  • 1 cup fruit punch
  • 4 tablespoons fresh lemon juice
  • 1 cup lemon-lime soda
  • 6 fresh mint leaves
  • 4 tablespoons rainbow sherbet
  • fresh mint for garnish

Preparation

Into the bottom of two glasses, place three mint leaves each. Use a muddle to crush them. Fill glasses halfway with ice. Into each glass, put two thin lemon slices, 1/2 cup punch, 2 tablespoons of lemon juice and 1/2 cup lemon-lime soda. Top with 2 tablespoons rainbow sherbet, and garnish with a sprig of mint.
