Almost anything made with apple can be substituted with Zucchini. I've made Apple pie and Apple Crisp with Zucchini instead of apple. No one knows the difference! I took two pies to an event and everyone kept saying, "oh this apple pie is good." Only one other person knew what it was because I told them.

I read down below about relish. That is the best thing to do with it. My family does not like any other kind of relish since we have used Zucchini when making relish. We also deep fry ours as well. We did this with all our left over cucumbers when we got fed up with canning.
