Cranberry-nut Cookies

These cookies are packed with flavor, and with so much to crunch on, are very satisfying as well.

Cranberry-nut cookie


  • 1/2 cup butter
  • 6 T. white sugar
  • 6 T. light brown sugar, packed
  • 1 tsp. vanilla
  • 1 egg
  • 1 cup plus 2 T. flour
  • 1/2 tsp. baking soda
  • 3/8 tsp. salt
  • 1/2 cup white chocolate bits
  • 1/2 cup dried cranberries
  • 1/2 cup chopped walnuts
  • 1/2 cup coarsely chopped macadamia nuts

Preheat oven to 350 degrees F.

Cream butter, sugars and vanilla. Add egg and mix well. Combine flour, salt and baking soda, and add to butter mixture; mix well. Mix in chocolate bits, cranberries and nuts. Drop tablespoon-sized clumps on ungreased cookie sheet, about 2 inches apart. Flatten with fork. Bake 12 to 14 minutes, until bottoms begin to brown and tops are golden. Remove to baking rack to cool.

Makes 16 to 24 generous-sized cookies.
