Fresh Apple Cake

Pair this farm-fresh cake with a cup of tea for a perfect morning treat.

  • 3 cups peeled, diced apples
  • 2 cups sugar
  • 2 eggs, beaten
  • 8 T. butter, melted
  • 3 T. lemon juice
  • 3 cups all-purpose flour
  • 1 tsp. baking soda
  • 1/4 tsp. salt
  • 1 tsp. cinnamon
  • 1½ tsp. vanilla extract
  • 1/4 cup chopped nuts (pecans or walnuts)


  • 1/4 cup brown sugar
  • 1/4 cup white sugar
  • 1/2 tsp. cinnamon
  • 1/4 cup chopped nuts (pecans or walnuts)


Preheat oven to 350 degrees F.

Cover apples with sugar and let set 10 minutes. Stir in eggs, butter and lemon juice.

Into separate bowl, sift flour, baking soda, salt and cinnamon. Add apple mixture to dry ingredients. Stir in vanilla and nuts.

Pour batter into a greased 9- by 13-inch baking pan.

Combine brown and white sugars, cinnamon, and nuts. Sprinkle over top of cake batter. Bake 50 to 60 minutes.

Serves 18 to 21.
