Hearty Cranberry Cookies

For a pretty and tasty treat, add cranberries and nuts to your white-chocolate chip cookies.

Ingredients

  • 1/2 cup butter
  • 6 T. white sugar
  • 6 T. light brown sugar
  • 1 tsp. vanilla
  • 1 egg
  • 1 cup all-purpose flour, plus 2 T.
  • 3/8 tsp. salt
  • 1/2 tsp. baking soda
  • 1/2 cup white chocolate chips
  • 1/2 cup dried cranberries
  • 1/2 cup chopped walnuts
  • 1/2 cup coarsely chopped macadamia nuts

Preparation
Preheat oven to 350 degrees F.

Cream together butter, sugars and vanilla. Add egg and mix well. Sift together flour, salt and baking soda, and add to butter mixture. Mix until just combined. Fold in chocolate chips, cranberries and nuts.

Drop tablespoon of mixture onto ungreased cookie sheet, about 2 inches apart.
Bake for 12 to 14 minutes, until bottoms begin to brown and tops are golden. Remove to baking rack to cool.

Makes 16 extra-large cookies.
