Yield: 4 servings
- 16 plum or Roma tomatoes
- 4 T. olive oil
- 1 large onion, chopped
- 6 to 8 anchovies, chopped
- 2 to 3 garlic cloves, minced
- 4 T. tomato paste
- 8 basil leaves
- pinch of freshly ground black pepper
- grated Parmesan cheese (optional)
Cut tomatoes in half lengthwise, and scoop out insides. Place tomatoes on greased baking tray, cut side up.
In medium-sized bowl, mix olive oil, onion, anchovies and garlic, and spoon mixture into tomato halves. Set oven to broil, and cook tomatoes for approximately 20 minutes or until they start to soften and turn brown. Remove tomatoes from oven, and let cool.
Once cooled, purée tomatoes in blender with tomato paste, basil and pepper. Place mixture in medium-sized pot, and heat for 2 minutes. Serve tomato sauce over pasta, with light sprinkling of grated Parmesan cheese if desired.
