Smoky Hand-cut Baked Fries

The smoky, spicy flavor of these homemade fries is even more delicious when paired with homemade ketchup.

Yield: 4 servings  

Ingredients

  • 4 large baking potatoes
  • 1 T. extra-virgin olive oil, plus additional for greasing pan
  • 3/4 tsp. smoked hot paprika
  • 1/2 tsp. sea salt
  • 1/4 tsp. ground black pepper

Preparation
Preheat oven to 450 degrees F. Lightly grease large baking sheet. Cut potatoes using batonnet cut.

Bring large saucepan of water to boil. Drop potatoes into water and simmer for 2 minutes. Pour potatoes into colander and drain well. Place potatoes on clean dish towel and blot dry. Transfer to bowl. 

Add olive oil, paprika, salt and pepper. Toss fries to coat with oil and spices. Spread in single layer on baking sheet. Bake 25 minutes or until browned and crispy. Sprinkle with more sea salt and serve hot with Roasted Maple Tomato Ketchup.
