Strawberry & Shallot Salsa

Give your salsa a sweet summer makeover.

Yield: about 1½ cups


  • 8 ounces strawberries, diced
  • 1/4 cup diced shallots
  • 2 T. chopped fresh cilantro
  • 1 T. diced fresh jalapeño, with or without seeds
  • juice of one lime (about 2 T.)
  • 1/4 tsp. finely ground sea salt


Place the strawberries, shallots, cilantro and jalapeño in a medium bowl. Pour in the lime juice, and sprinkle in the salt. Stir to combine all ingredients. Eat right away or refrigerate up to an hour before serving.
