A variation on a traditional pesto sauce, this recipe combines walnuts with sun-dried tomatoes.
Yield: 1 cup
- 1 cup sun-dried tomatoes
- 1/2 cup chopped basil
- 1 cup olive oil
- 1 garlic clove, minced
- 1/2 cup chopped walnuts
- 1/4 cup grated Parmesan cheese
- 1 tsp. lemon juice
- 1 tsp. smoked paprika
- black pepper to taste
Place sun-dried tomatoes in bowl of warm water for approximately 5 minutes to remove any oil and allow them to soften.
Pat tomatoes dry, and place in a food processor. Add the basil, olive oil, garlic, walnuts, Parmesan cheese and lemon juice. Blend until the mixture forms a firm paste. Add black pepper to taste.
