Toad in the Hole

This simple breakfast casserole has its origins in England, where it has taken the chill off many a cold morning.

  • 12 breakfast links
  • 1 cup flour
  • 1/2 tsp. salt
  • 2 eggs
  • 1 cup milk

Preheat oven to 425 degrees F.

Fry links until cooked through, but not brown and crispy. Drain and reserve grease; spread 2 teaspoons grease on bottom of pie plate. Place links, whole, in pie plate.

In medium bowl, combine flour and salt. Stir in eggs and milk, and beat well. Pour mixture over sausages. Bake 30 minutes, until casserole is puffed and brown. It will crack on top, and as it cools, it will fall. Serve warm with maple syrup and applesauce on the side.

Serves 6.
